Bubble and Squeak


This is another quick and easy main dish meal from Whole Foods for the Whole Family by La Leche League International.  I prefer it made with beef kielbasa to any other left over meat; you can use turkey sausage, but I find that the milder meat & seasonings in it do not stand up as well to the other flavors in this dish.  It would also be nice topped with crisped crumbled bacon just prior to serving.

1 onion, diced
2 t. oil (unless sausage is to be included)
2-3 potatoes, chopped (more for a large family)
1/2 to 1 c. meat (ground meat, sausage, leftover roast or chicken)
1/2 to 1 head of cabbage, chopped
1/4 c. cider vinegar

Saute onion and any uncooked meat in oil. Add potatoes and cook until half done. Add cabbage to pan and cook until cabbage is wilted and potatoes are done. Stir in vinegar and cook a few minutes longer to blend flavors. Serve right from skillet.
