I'm still working with this recipe; my mother made the BEST pie crust and this is her recipe. I have successfully substituted butter for the shortening, but if you use salted butter you need to reduce the amount of salt by probably half.
Pie Crust
2 c. flour
2/3 c. shortening
1 t. salt
1/4 c. ice water
Mix flour and salt together.
Save out 1/3 c. of the flour/salt mixture and mix with the ice water,
forming a paste. Cut the shortening into the remaining flour/salt mixture.
When the texture of rice is obtained, add the flour/water paste.
Mix well and chill.
