Biscuits - I'm Still Learning...

My Great Aunt Frances was a wonderful cook! She had some wonderful recipes and this was her recipe for Baking Powder Biscuits. These go wonderfully with Chicken a la King or you can add the sugar and use these as a base for Strawberry Shortcake.
Biscuits Supreme  (1 1/2 recipe)
3 c. flour, sifted    
6 t. baking powder    
3/4 t. salt    
3/4 t. cream of tartar    
3/4 c. shortening
1 c. milk    
(3 t. sugar if using for shortcake)    

In a bowl, mix dry ingredients thoroughly. Cut in or rub in shortening. Add milk, mixing only enough to be able to get the dough to form a ball. Gather the dough together and turn out onto a lightly floured board. Handle the dough as little as possible. Roll out into a rectangle of about 3/4 to 1 inch thickness and then fold the dough by thirds and roll out again. Turn the dough 1/4 turn and repeat the folding and rolling out process.

Dip a biscuit cutter or drinking glass in flour and cut out biscuits.  Handling the dough as little as possible, bring your scraps together and roll out the remaining dough. Cut more biscuits. Repeat the process until you have used up all the remaining dough. Place the biscuits on a greased baking sheet. 
Bake at 425 degrees for 10-12 minutes.
Substitutions: You can substitute chilled butter for the shortening, but then I reduce the baking powder.
