Haroset

This is traditionally served at Passover, but I had a craving today so we had Haroset with our Chicken Wings for dinner.

6 peeled apples, coarsely chopped
1 ½ cup chopped almonds
3 tablespoon sugar, or to taste (if the apples are sweet, omit sugar)
1/2 teaspoon cinnamon
grated rind of 1 lemon
2 T. lemon juice (if the apples are very sweet)
1 cup Sweet Red Wine (Manischewitz Concord)

Combine all, mixing thoroughly. Add wine as need. Blend to desired texture -- some like it coarse and crunchy, others prefer it ground to a paste. Chill.
