Coconut Raisin Oatmeal Cookies

My mom used to make the most awesome oatmeal cookies. They weren't overly sweet so you could still taste the other ingredients. This is my adaptation of her recipe. I guess for people who are dairy allergic, you could substitute more coconut oil or shortening. The substitution will affect the cookie's texture somewhat, but they'll still be delicious. (Mom's original recipe called for shortening.)

1/2 c. butter
1/2 c. coconut oil
1 c. sugar    
2 eggs    
1/2 c. raisins  
1/2 c. grated unsweetened coconut    
3/4 t. soda    
1/2 t. salt    
2 c. rolled oats    
1 t. cinnamon    
2 c. flour                
Cream butter, oil and sugar.  Add eggs, beating well.  Mix flour, soda, salt and cinnamon in another bowl.  Mix flour mixture into the creamed mixture, beating thoroughly.  Mix in oats, raisins and coconut.  Drop by teaspoonfuls onto greased cookies sheets.  
Bake at 375 degrees for 10-12 minutes.
